Asparagus with poached eggs is one of the spring classics. My story about asparagus you already now so to make it clear again, these are not wild asparagus. My heart is still broken with not eating them 2nd year in a row.

Joke aside, asparagus are like spring version of kale – low in calories and a great source of nutrients.:) Not to mention how this recipe is low carb and it is soooo good. Poached egg is a perfect match to asparagus with grated parmesan all over with few drops of olive oil. You can combine honey mustard sauce as well.

Asparagus with Poached Eggs
- 400 g Fresh Asparagus
- 2 pcs Eggs
- Parmesan Cheese
- Olive Oil
- Salt & Pepper to taste
- In a shallow pan bring water to boil and blanch the asparagus, just for a minute until they got soft but still crispy
- Once asparagus are blanched, take them out and dry them well, heat up the grill (or grilling pan), and grill the asparagus for few minutes, until golden brown
- In the meantime poach your eggs (there are so many ways of doing that so up to you)
- Once asparagus are done spread them on a plate, place the poached egg on top and grate parmesan over, drizzle over olive oil and season with salt and pepper
