You must be asking yourself how cardamom fits in a dessert. Well let me tell you it fits amazing! Cardamom Blueberry Crumble Bars is such a simple recipe. I would even say, a true summer dessert. Done quickly with not making a big mess behind you. Hmmm, the mess depends who is cooking! This time I was the pastry chef, so the mess was minimal! 🙂

I love simple fruit cakes, where you have a basic dough, and you can mix in any fruit you like. It is blueberry season, so our fruit of choice was quite clear. The same with our beloved Blueberry Muffins with Lemon Frosting!
What makes this dessert special, except cardamom, is crumble topping. Sweet buttery taste combined with juicy blueberries. SAY NO MORE!

Cardamom Blueberry Crumble Bars
Ingredients
Dough
- 190 g All-Purpose Flour
- 2 tsp Baking Powder
- ½ tsp Grounded Cardamom
- 150 g Brown Sugar
- 115 g Butter salted
- 160 ml Milk
- 2 pcs Eggs large
- 2 tsp Vanilla Extract
- 2 tsp Lemon Zest
- Handful Fresh Blueberries
Crumble
- 65 g All-Purpose Flour
- 55 g Brown Sugar
- ½ tsp Grounded Cardamom
- 4 tbsp Butter room temperature
Instructions
- Preheat the oven to 180 ºC
- Grease a square baking tray
- In a large bowl, mix together flour, baking powder, cardamom, and sugar. The add the butter, milk, eggs, and vanilla. Mix everything until combined
- Pour the mixture into the greased tray
- In a smaller bowl toss together the blueberries and lemon zest and sprinkle the blueberries over the mixture
- For the crumble in a small bowl, whisk together the flour, sugar, and cinnamon. Add the butter and mix with your hands until the mixture is moist and a crumble forms
- Sprinkle the crumble evenly over the fruit
- Place the tray in the oven and bake for 45-55 minutes or until golden on top (If you insert a skewer into the center, it should come out almost clean)
- Let it cool 5 minutes then serve it warm with vanilla ice cream
