Our pumpkin bread with cream cheese recipe idea was born, as well, after facing a lot of pumpkin puree leftovers. Sooooo what to do. 🙂 It was Sunday, a really rainy Sunday when I secretly hoped that Basti will bake something sweet to survive the day. As we travelled that weekend, the only thing in the fridge was pumpkin puree, which was a leftover from Friday and two bananas, which were almost black. And cream cheese is something we always have in the fridge, so there was no need to worry! 🙂

Pumpkin is so delicious. You should already have noticed. Whether leftover or not, but we have really great recipes already cooked. Have you already tried our pumpkin gnocchi? You should do! But to come back to the pumpkin bread with cream cheese filling! As I mentioned, I was hoping, Basti bakes. And I was a lucky girl. This smell has gently awakened me and I was so curious what he will create up this time. Best thing about this bread is you can really eat it through the whole week. I love bring it to work and just snack in the afternoon after lunch.

Pumpkin bread with cream cheese filling
Now when I am writing this, I just realized how this bread is actually cinnamon bun bread, as a cherry on top you sprinkle mix of sugar and cinnamon. Nooo, I will not lie, nothing is like cinnamon rolls. But this great golden colour of the pumpkin puree is already appealing enough, do you agree? And then these cream cheese dots in the cake are just heavenly! They make the whole bread juicy and fluffy. I could have eaten the whole bread at once.
Cream Cheese Stuffed Pumpkin Bread
- 2 pcs Banana mashed
- 120 g Pumpkin Puree
- 70 g Coconut Oil melted
- 110 g Maple Syrup
- 2 pcs Eggs
- 1 tbsp Vanilla Extract
- 190 g All-Purpose Flour
- 2 tbsp Baking Powder
- ½ tsp Baking Soda
- 1 tsp Cinnamon Powder
- ½ tsp Salt
- 130 g Cream Cheese
- 50 g Cinnamon - Sugar
- Butter for Greasing
- Preheat the oven to 170ºC
- Grease the cake tin with butter
- Mix together bananas, pumpkin puree, coconut oil, maple syrup, eggs, and vanilla until combined together. Then add the flour, baking powder, baking soda, cinnamon, and salt, mix it all together
- Pour the mix into the cake tin
- Spoon the cream cheese into the pastry bag and squeeze out teaspoon size amounts directly into the pumpkin bread mix. At the end swirl the cream cheese with a stick and sprinkle the cinnamon sugar over
- Place in the oven and bake for 40-45 minutes
- Please let it cool down. Behave and give it some minutes
