Pancakes for the weekend! I am truly a fan of a big brunch on a Sunday morning. Avocado Toast with poached eggs and fluffy pancakes. Sweet and savory at the same table. It cannot get better with these extra fluffy gluten free oatmeal pancakes.
Actually, these pancakes weren’t planned at all. As you already know, we eat our porridge almost every day. But at the weekend it should be something special and I still didn’t want to start the day without my oats. The result was gluten free fluffy pancakes, which I absolutely have to share with you now.
And the trick for fluffy pancakes is baking powder. Only then, they rise up while baking.
This pancake batter is made really quick. Simply mix everything in the food processor and let it run until a smooth dough.
When it comes to topping, there are no limits. You can of course add berries to the dough during baking. We like our pancakes simple with enough topping. Fresh berries, slices of banana or just maple syrup are always a good idea!
If you want the savory option, bacon is of course the best choice!

Gluten Free Oatmeal Pancakes
- 100 g Oats
- 1 pcs Banana ripe
- 220 ml Oatmilk
- 1 tsp Cinnamon Powder
- ½ tsp Vanilla Extract
- 1 tsp Baking Powder
- Coconut Oil
- Put the oats, banana, milk, cinnamon and vanilla extract in a blender and mix everything well. Then add in the baking powder
- Process the ingredients until you have a smooth dough
- Heat up a pan over medium heat and add some coconut oil.
Use a large spoon or ladle to put individual piles of dough in the pan and bake for 3-5 minutes on both sides until they turn golden yellow
- Repeat the process with the oil and dough until you have all your pancakes
- Enjoy your BeastFeast!
