We have low-carb day today so that means I am getting out all the cheese we have. This time we will go for yummy creamy mozzarella balls. I just love them. Especially in salads, as you have them in almost on every bite, and that is the game changer in this salad. 🙂

Ingredients

Salad

  • 400 g Green Beans boiled - al dente
  • 200 g Cherry Tomatoes
  • Handful Mixed Green Salad
  • 2 tbsp Pine Nuts roasted
  • 150 g Mozzarella Balls

Dressing

  • 2 tbsp White Aceto Balsamico
  • 2 tbsp Olive Oil
  • ½ Juice of Lemon
  • ½ Lemon Zest
  • 3 tbsp Joghurt
  • Salt & Pepper to taste
  • Splash of Water

Instructions

  • Trim the ends off of the beans. Cook in boiling water until al dente. This will take about 5 minutes. Then drain the beans and then pour into an ice bath
  • In a big bowl mix all the veggies with mozzarella
  • Mix all the dressing ingredients in food processor – adjust the taste if needed
  • Pour the dressing mixture over the greens and mix it all well

Notes

The ice bath serves three purposes:
  1. It preserves the vibrant green color of the beans
  2. It cools them off
  3. It prevents the mozzarella cheese from melting
