Harissa Pulled Salmon – one of my favorite recipes. Not only because it combines all of the my most favorite ingredients – it is also so simple to prepare without a lot of fuss.  

It makes a perfect lunch on the go or simple and easy healthy dinner. All of that plus kitchen cleaning can be done is MAX 45 minutes – I promise!

Juice oven-baked salmon spiced with harissa herbs

Ingredients

  • 200 g Pearl Couscous
  • Handful Fresh Herbs (Parsley, Dill, Mint)
  • 1 tbsp Harissa Spice
  • 1 tsp Smoked Paprika Powder
  • 600 g Salmon Fillet
  • Salt & Pepper to taste
  • Olive Oil

Dressing

  • ½ pcs Lemon Juice
  • 2 tsp Mustard
  • 1 tsp Honey
  • Olive Oil
  • Salt & Pepper to taste

Instructions

  • Preheat up the oven to 180°C 
  • Boil the couscous as per package instructions 
  • Mix harissa and smoked paprika with 1 tbsp olive oil - season with salt and pepper. Rub the salmon with that mixture 
  • Place the salmon in the oven proof bowl and cover with a foil - bake it for 15-20 minutes, remove the foil and bake for 5 more minutes 
  • While salmon is baking mix fresh herbs with cooked couscous, and pour in the dressing (if dressing is too thick add a splash of water and adjust the taste if needed - more honey or mustard). Mix all well till evenly coated
  • Once the salmon is done, remove the skin and pull it apart with the fork. Serve it together with couscous  
  • Enjoy your BeastFeast!
