Kale Salad

  • 2 Handful Fresh Kale
  • 500 g Boneless Chicken Breast
  • 50 g Parmesan Cheese sliced
  • Salt & Pepper to taste
  • ½ Juice of Lemon

Ceasar Dressing

  • 2 tbsp Greek Yogurt
  • 1 tbsp Olive Oil
  • ½ Juice of Lemon
  • 1 tsp Old Style Mustard
  • 3 pcs Anchovy Fillets
  • 2 pcs Garlic Cloves
  • 1 tbsp Water optional


  • Wash kale and “massage”it with lemon juice and drizzle of olive oil for few minutes
  • Place the grilling pan over medium heat and drizzle in some olive oil, before placing chicken on the pan, season with salt and pepper. Grill the chicken for few minutes on each side, until golden and cooked through 
  • In the meantime, mix all the dressing ingredients with an immersion blender (or any other blender). Add water if needed. It should be not too liquid.
  • Once the chicken is done, slice it into think slices
  • Add the dressing to the kale and mix well till evenly coated
  • Place chicken on top and sprinkle with parmesan slices
  • Enjoy your BeastFeast!
