Ingredients

Lamb Pistachio Patties

  • 500 g Minced Lamb
  • 50 g Pistachios
  • Handful Fresh Rucola
  • 1 pcs Onion finely chopped
  • 1 pcs Garlic Clove minced
  • 1 tsp Harissa Spice
  • Olive Oil
  • Salt & Pepper to taste

Whipped Feta Cream

  • 200 g Feta
  • 80 g Greek Yoghurt or Skyr
  • 2 tbsp Lemon Juice
  • 1 tbsp Olive Oil
  • Mint Leaves
  • Salt & Pepper to taste
  • Roasted Cauliflower
  • Handful Fresh Pomegranate optional

Instructions

  • Place pistachios in a food processor and chop them roughly, place them into a bigger bowl. Then mix rucola the same way in a food processor and add it to the pistachios in a bowl. Continue then by chopping onion and garlic to get a smooth paste
  • Add the minced lamb in the bowl, season with salt and pepper, drizzle with olive oil
  • Mix it all well to combine all the ingredients
  • Make petties from the mixture, size depends on your preferences – we like smaller ones
  • Heat up the oven to 200°C
  • Place a grilling pan over medium heat and drizzle in olive oil, once warm enough add patties for a quick grill – 2 minutes on each side
  • Once all patties are grilles, spread them on a baking sheet and place them in the oven to finish them with baking – about 10 more minutes
  • Once petties are baking, mix all the ingredients of whipped feta cream into a food processor and mix to a smooth paste
  • Once petties are done, serve them with whipped feta cream and warm pita bread OR salad and roasted cauliflower
  • Sprinkle over pomegranate seeds to garnish (optional)
