Juicy meatballs, grilled zucchini and halloumi are the perfect fit with avocado creme. But hey, what does not fit with avocado creme or guacamole? 🙂

Light, colorful, with lots of veggies aaaaand juicy oven baked meatballs. This meal is so full of taste that you will not even miss carbs. Honestly, I am using these low carb days as an opportunity to eat a lot of cheese! 🙂 So these meatballs with avocado are served with halloumi as well. This dish is a mashup of the American and Greek cuisine.

As a cherry on top (or in this case on the bottom) we prepared super light and zesty avocado crème. Made from Avocado and Yoghurt, which makes it super light and creamy. You can alo pimp your creme with some spring onions or some roasted pine nuts.

Ingredients

Meatballs

  • 400 g Lean Minced Beef
  • 1 pcs Purple Onion chopped
  • Handful Fresh Parsley roughly chopped
  • ¼ tbsp Worcester Sauce
  • 1 tbsp Mustard
  • Salt & Pepper to taste
  • Pinch of Garlic Powder

Avocado Creme

  • 1 pcs Hass Avocado
  • 4 tbsp Skyr
  • 5-6 tbsp Lemon Juice
  • 3 tbsp White Aceto Balsamico
  • Salt & Pepper to taste
  • Pinch of Garlic Powder

To Serve

  • 2 tbsp Olive Oil extra virgin
  • 1 pcs Zucchini large
  • 200 g Halloumi Cheese
  • Handful Cherry Tomatoes
  • Handful Rucola Salad

Instructions

  • Preheat the oven to 180 °C and place a parchment paper on the baking tray
  • Add the beef, onion, garlic, parsley, Worchester sauce, mustard, and a pinch each of salt and pepper to a bowl. Coat your hands with a bit of olive oil, and roll the meat into 2 tablespoon size balls (will make 12-16 meatballs), placing them on the prepared baking sheet. Transfer to the oven and bake for 15-20 minutes or until the meatballs are crisp or cooked through on the inside
  • Meanwhile, make the avocado creme. Combine all ingredients in a blender and blend until smooth and creamy. If needed, add some water, 1 tablespoon at a time as needed, to thin the sauce
  • Prepare a pan with olive oil over medium heat. Fry the Zucchini slices and the halloumi cheese until golden brown on both sides
  • To serve, spread the avocado creme on plates. Add the meatballs, zucchini, halloumi, tomatoes, and rucola
  • Drizzle olive oil and lemon juice lightly over top of everything
