One Pot Calamari Pasta

This is a favorite pasta dish made with just a few basic ingredients. It serves as a wonderful pasta course in a multi-course Italian dinner

Ingredients

  • 600 g Calamari fresh
  • 500 ml Tomato Sauce
  • 2 pcs Purple Onions chopped
  • 5 tbsp Olive oil extra virgin
  • 100 ml White Wine
  • 1 pcs Garlic Clove
  • Fresh Parsely chopped
  • Salt & Pepper to taste
  • 250 g Spaghetti
  • 500 ml Water
  • Handful Cherry Tomatoes cutted

Instructions

  • Tipp: Use a bigger pot where you can fit spaghetti
  • Wash and clean calamari (I remove the head and all inner parts). Dry calamari with paper towel and cut them on circles (same size – depends how you prefer)
  • Chop both onions on small even pieces. Place the pan on a medium heat, add the olive oil and after warm enough add onion and squeezed garlic (be careful you don’t burn it)
  • Cook until golden or brown (Trick 1: bring the heat on low and add small splash of water, even it takes longer on lower heat, cooking onions like that until water disappear will make nice creamy layer for the rest of ingredients) 
  • Add calamari, salt and pepper to taste. After some minutes add cherry tomatoes and cook for few minutes to let tomatoes spread their juice. All the time it is important to maintain medium heat
  • Next step is to pour in tomato sauce and water (Trick 2: add step by step sauce and water, don´t pour in all at once as maybe you will not need that much OR you will need more than that)
  • Add spaghetti and wait until they softened and fall into the sauce. After that sprinkle with fresh parsley and add wine 
  • Cover the pot and cook on medium heat. You need to observe the pot all the time as pasta is absorbing all the liquids most probably you will need to add tomato sauce and water
  • Cook until pasta is done (al dente or how you like it)
  • Sprinkle with more fresh parsley, parmesan and drizzle in some olive oil
