Such a simple and quick to prepare meal. This combo is my ‘go to’ meal when I do not have a lot of time but I still want to treat myself nicely, you know, it is Fish Friday and we need to celebrate the end of the working week.

I do not think there is a better way to do that than with this yummy combo.

Ingredients

Rice

  • 250 g Rice
  • 375 ml Water
  • ½ Juice of Lemon
  • 1 tsp Lemon Zest

Salmon

  • 600 g Fresh Salmon Fillet
  • 3 tsp Sesame Oil
  • 2 tbsp Lemon Juice
  • 2 tbsp Honey
  • 2 tbsp Fresh Coriander chopped
  • Salt & Pepper to taste

Avocado Salsa

  • 1 pcs Avocado ripe
  • 1 tbsp Lemon Juice
  • 1 tsp Avocado Topping Spices Just Spices
  • 1 tbsp Fresh Coriander
  • Salt & Pepper to taste
  • 1 tsp Olive Oil

Instructions

Rice

  • Cook the rice per package instructions. While it is boiling add the lemon juice and the lemon zest
  • Turn down the heat as soon as it is done

Salmon

  • Preheat the oven to 180ºC and cover a baking sheet with parchment paper
  • In a medium bowl, mix sesame oil, lemon juice, honey and cilantro and glaze the salmon with it
  • Place the salmon fillets onto the baking sheet and bake them in the oven for 20-25 minutes. Depends on the thickness of the fillets

Avocado Salsa

  • Peel the avocado, take out the pit and dice the avocado
  • Add the avocado with lemon juice, cilantro, Avocado Topping, salt and pepper into a bowl and mix well
  • Serve the salmon fillets over a pile of fresh lemon rice and top everything with avocado
  • Enjoy your BeastFeast!
