As currently I am in juicing phase, one day I was preparing my morning juice and thought how I could actually combine fresh juice and oats into nice breakfast. Guess what, after a research on internet I realised that is THE thing at the moment!

It is sweet, savoury and creamy, vegan friendly and healthy. Using seasonal fruits spiced turmeric porridge is all-season breakfast.

Spiced Turmeric Porridge

This Spiced Turmeric porridge will warm you and spice you up. Sweet, savoury, creamy, vegan friendly and healthy. Using seasonal fruits spiced turmeric porridge is all-season breakfast.

Ingredients

Porridge

  • 2 pcs Carrots
  • 1 pcs Granny Smith Apple
  • 2 pcs Oranges Juice & Zest
  • 1 cm Turmeric
  • 180 g Oats
  • 400 ml Coconut Milk
  • 1 cm Fresh Ginger
  • 40 g Protein Powder Coconut Flavor
  • Handful Roasted Walnuts

Topping

  • 1 pcs Granny Smith Apple
  • ½ Orange Juice & Zest
  • 1 tbsp Honey
  • 1 tsp Cinnamon

Instructions

  • If you have a juicer, juice 2 carrots, 1 apple and turmeric. Afterwards separately juice the orange and leave ½ orange juice for topping, the rest you mix with carrot and apple juice – for porridge you should have about 400ml of juice
  • Place the pan over medium heat, add oats and apple, carrot and orange juice (400ml), bring to the boil then lower down the heat
  • Pour in about 350ml coconut milk and cook for 8 to 10 minutes (until the porridge is soft and creamy). Stir often to avoid sticking
  • At the end mix in the protein powder and stir well
  • In the meantime, while porridge is cooking, cut 1 apple in half then into thin slices
  • In a small bowl mix honey, orange juice and zest, cinnamon. Mix it well
  • Place the grilling pan over medium high heat and add apples, pour in the mixture over apples and lower down the heat. Glaze the apples for few minutes – do not burn 
  • Serve it in a bowl topped with glazed apples and crushed roasted walnuts
  • Enjoy your BeastFeast!
