  • 200 g Orzo
  • 100 g Green & Black Olives chopped
  • 50 g Sun-Dried Tomatoes
  • 70 g Feta Cheese crumbled
  • Handful Fresh Herbs (Parsley, Dill, Mint)
  • Handful Fresh Rucola
  • Handful Fresh Baby Spinach

Lemon Mustard Vinaigrette

  • 100 ml Olive Oil
  • 4 tbsp Lemon Juice
  • 2 tsp Dijon Mustard
  • 1 tsp Honey
  • Salt & Pepper to taste


  • Boil the orzo as per instructors on the packaging – cool it down once done
  • In the meantime, prepare all the other salad ingredients: chop the olives and sundried tomatoes, crumble the feta and chop fresh herbs 
  • For vinaigrette in a food processor mix all the ingredients together
  • Once orzo is cooled down, mix in all the other ingredients together with fresh salad and pour in the dressing. Mix it all well till evenly coated
  • Serve it as a main dish or side dish with grilled goodies
